Citrus Yuzu (Citrus junos) - citrus rezistent la frig
Citrus Yuzu, also known as Citrus junos or Wild Mandarin, is a fruit native to East Asia, especially Japan, Korea, and China, known for its strong aroma and very sour taste. Yuzu is small to medium in size, with a thick and slightly rough peel, yellow or green in color depending on the ripeness. Although it has little juice, it is valued for its complex aroma, which combines notes of grapefruit, mandarin, and lime.
The fruit, which blends flavors of lemon, grapefruit, and mandarin, is frequently used in Japanese cooking, being a main ingredient in sauces (such as ponzu), marinades, drinks, and desserts. Yuzu kosho, a spicy paste made from yuzu peel, hot peppers, and salt, is also popular. In Japanese culture, yuzu is traditionally used in baths (yuzuyu) to bring health benefits, especially during the winter solstice.
A unique feature of yuzu is its frost resistance, enduring temperatures of down to -9°C, making it one of the few citrus fruits in the world with such good hardiness. According to some sources, the plant has also successfully withstood -20°C.
From a nutritional standpoint, yuzu is rich in vitamin C and antioxidants, offering benefits for the immune system and digestion. Its popularity has grown worldwide, becoming a sought-after ingredient in modern cooking and the beverage industry.
