Citrus Yuzu (Citrus junos) - cold-resistant citrus
Citrus Yuzu, also known as Citrus junos or Wild Mandarin, is a fruit originating from East Asia, especially from Japan, Korea and China, known for its strong aroma and extremely sour taste. Yuzu is small to medium in size, with a thick and slightly rough skin, yellow or green, depending on the degree of ripeness. Although it has little juice, it is appreciated for its complex aroma, which combines notes of grapefruit, mandarin and lime.
The fruit, which combines flavors of lemon, grapefruit and mandarin, is frequently used in Japanese cuisine, being the main ingredient in sauces (such as ponzu), marinades, drinks and desserts. Yuzu kosho, a spiced paste made from yuzu peel, hot peppers and salt, is also popular. In Japanese culture, yuzu is traditionally used in baths (yuzuyu) to bring health benefits, especially during the winter solstice.
A unique aspect of yuzu is its resistance to cold , withstanding temperatures of up to -9°C , being among the few citrus fruits in the world with such good resistance. According to some sources, the plant successfully resisted even at -20°C.
From a nutritional point of view, yuzu is rich in vitamin C and antioxidants, having benefits for the immune system and digestion. Its popularity has grown globally, becoming a sought-after ingredient in modern cuisine and the beverage industry.
