Citrus australasica - a botanical species endemic to Australia, also known as Caviar Lime or Finger Lime.

The plant appears as a spiny shrub, very decorative with its white-pink, strongly fragrant flowers.

The fruits are highly valued and have great commercial value, increasingly used in gourmet dishes. The fruit's content consists of vesicles very similar in appearance to caviar, hence the name "Caviar Lime." When the vesicles are eaten fresh, they create an effervescent burst of tangy flavor as they are chewed. The juice is acidic, similar to that of a lime.

The fruits are also used to make marmalades, lemonades, or even pickled. The dried peel is used as a seasoning due to its strong aroma.
