Satureja montana - cimbru de iarna (cultura biologica)
Satureja montana (also known as winter savory, winter thyme, or mountain savory in English) is a semi-woody, shrubby, aromatic perennial plant from the Lamiaceae (mint) family, native to Mediterranean regions, southern Europe, and parts of North Africa and Western Asia. It is frost-hardy and can survive moderate winters, hence the common name "winter savory" (unlike summer savory – Satureja hortensis – which is annual).
The plant forms compact, low bushes (20-40 cm tall, up to 50-60 cm at maturity), with semi-woody stems at the base and dense branching. The leaves are small, linear-lanceolate, stiff, glossy dark green, with a strong, spicy-peppery aroma similar to thyme or oregano but more intense and with pine/balsam notes. Flowers appear in summer (June-October), small, tubular, white to pale pink/lilac, grouped in dense spikes at the branch tips – strongly attracting bees and pollinators.
The leaf aroma is excellent in cooking: used fresh or dried to season beans, vegetables, meat, soups, sausages, and aromatic teas. It has a stronger and spicier taste than summer savory.

- Watering: low to medium – well-drained soil, allow substrate to dry between waterings; avoid excess water, especially in winter (prone to rot in wet soil)
- Soil: poor-stony, well-drained, alkaline/neutral (pH 6.5-8+), sandy or rocky; avoid over-fertilizing (loses aroma)
- Substrate: small pot or well-drained garden soil; excellent as edging, dry ground cover, or in containers
- Propagation: seeds in spring, cuttings in summer, or division
A robust, low-maintenance plant, perfect for herb gardens, rock gardens, borders, or pots – drought-resistant, helps repel some pests (good companion for beans/onions), and adds extra aroma and beautiful flowers! An excellent choice if you want a perennial and useful kitchen herb all year round.
